In order to become Guaranteed Green, Trattoria No.10 has achieved the following:
WATER & ENERGY
To save water and energy, we have retrofitted all our handwashing and kitchen prep sinks with faucet aerators and low flow sprayers. These changes give us water savings of up to 18,000 gallons of water per year!
To decrease our energy usage, we have timers on all our exhaust fans and high effeciency hand dryers in our restrooms. We’ve also committed to keeping the restaurant temperature 2 degrees warmer in the summer and 2 degrees cooler in the winter. You’ll never notice, but we’ll save a lot of energy and some decent dollars as well.
WASTE
Trattoria No.10 has implemented a full-scale recycling program. We recycle plastic, glass, aluminum, paper and cardboard in an effort to divert as much waste from landfills as possible. We reduce our waste stream by using hand dryers instead of paper towel dispensers in our bathrooms, linens instead of paper napkins and as few disposables as possible. Those disposables are produced using no chlorine, and are made from 100% recycled fiber with high amounts of post-consumer fiber.
FOOD
Trattoria No.10 has committed to the purchase of local, sustainable food products wherever possible. We are a partner in the Shedd Aquarium Right Bite program and members of The Green Chicago Restaurant Co-op’s sustainable food buying program. A partial list of our local food partners is on the back of our menu.
CHEMICAL & POLLUTION REDUCTION
We use a Green Seal Certified, non-toxic all-purpose cleaner to help us keep a clean, safe and healthy kitchen. We also use non-toxic dishwashing products which do not contain harmful chemicals, and also come in a compact form with minimal packaging to reduce transportation greenhouse gas emissions and waste generation. To protect the quality of our air, we use non-toxic plant based warming fuels and soy candles. So, we can all breathe a little easier.
